“Mold-aged” sushi comes to Kitashinchi, Osaka: SUSHI TOKA opens October 31, letting tuna rest to draw out its flavor

A sushi restaurant that ages tuna with mold is about to open in Kitashinchi, Osaka’s upscale dining district. SUSHI TOKA (鮨 刻香) opens on Saturday, October 31, 2026. Its concept is “A story of tuna and time in every piece of sushi,” offering fish whose aroma and flavor change over time, served as nigiri.

“Tuna gets better with time”: what aging brings out in fish

The restaurant focuses on the potential of the fish itself and on how aging changes its taste. Aroma, texture and the sense of umami shift with the conditions and length of aging, so the restaurant takes up mold aging, an unusual method, to explore fish from many angles.

At the heart of it is mold-aged tuna. By comparing fish aged for different periods, and combining research into the condition of the ingredient with a sushi chef’s skills, it aims to serve sushi in which every piece has its own character. Managing temperature, humidity and time is said to be the foundation of its sushi-making.

A collaboration between researcher and chef

Behind the counter are mold-aging researcher Papachel (パパチェル) and Taniguchi (谷口), a sushi chef from Kyoto Saeki. The restaurant says it will combine what research reveals about how fish changes with the chef’s skill in finishing each piece, to bring out new appeal in aged fish.

The aim is not just to show off an unusual technique, but to explore the relationship between fish and time and widen what sushi can be. Its motto is “Let the tuna rest. Draw out the umami.” A counter where both research and craftsmanship are on display should appeal to the curious sushi lover.

For a special evening, it could be a place to add to your list if you want a piece of sushi unlike the usual.
